Strawberry Freezer Jam

1 lb. Oregon strawberries, very ripe

4 cups sugar

2 tbsp. lemon juice

¾ cup water

1 tbsp. plus 1 tsp. powdered gelatin

 

    Pour water into a small pot. Add gelatin and allow to sit for ten minutes at room temperature. Meanwhile, remove the green stems from the berries. Mash berries by hand. Pour the berry puree into a large mixing bowl. Add the sugar and lemon juice. Stir until combined. Let this mixture sit for ten minutes as well.

    Put your pot of gelatin on the stove over medium heat. Cook until it is clear and dissolved, stirring attentively, about 4 minutes. Next, slowly pour the dissolved gelatin into the fruit and sugar. Stir vigorously with a whisk.

    Pour the jam into pint sized plastic containers and keep chilled until set. Store in the freezer for up to 1 year. Take one container out at a time (stir well) and keep in the fridge. Add the finished jam to toast, pancakes, or plain yogurt.
